Memorial Day is right around the corner!

Don't forget the veggies!  Here's a simple grilled vegetable recipe that you will love!

Easy Grilled Veggies

1 Zucchini, sliced

1 Red onion, cut in pieces

1 bell pepper, cut in large pieces

Mushrooms, cleaned

2 T olive oil

1-2 T balsamic vinegar

salt and pepper to taste

Put veggies in a bowl.  Add olive oil, balsamic, salt and pepper.  Stir to combine.  Let sit 20-30 minutes to marinate.  Fire up the grill- add to grill (either on skewers, in a veggies basket, or directly on the grate).  Grill a few minutes and enjoy!  Leftovers are awsome in a green salad!

Use other veggies too such as eggplant, carrots, or sliced brussel sprouts! Get creative!
