Macadamia Nuts are not only healthy, but also packed with key nutrients such as mono-unsaturated fats, essential fatty acids, fiber. They are very calorically dense, so be mindful of portion sizes! Here's a delicious summer time light salad, that will bring you back to your last tropical vacation! (the title makes me laugh, because my dogs are named Mango and Macadamia Nut (Mac!)
Mango and Macadamia Nut salad
4 cups mixed salad greens
2 cucumbers, peeled and sliced
1 large mango, flesh removed, thinly sliced

Dressing:

2 tablespoons white balsamic vinegar
-
1 tsp of honey
-
1 teaspoon olive oil
-
1 teaspoon Dijon mustard

2 tablespoons chopped unsalted macadamia nuts

Place salad greens, cucumber and mango in a large bowl. Toss gently to combine. To make dressing, place dressing ingredients in a small bowl. Season with freshly ground black pepper and whisk to combine then set aside. Transfer salad to a serving bowl. Pour dressing over salad and toss gently again to combine. Sprinkle with macadamias to serve.
